I love potato salad, but all that mayo in traditional recipes? I am not loving that too much!
America's #1 Mayonnaise is made with simple ingredients: eggs, oil and vinegar. I don't eat mayo because it contains eggs. And....let's face it. Mayonnaise is fattening and high in calories. 97 calories per tablespoon and the majority of those calories comes from fat. One cup of potato salad made with mayo has about 357 calories. About 30% is pure fat.
You could opt for low fat or fat free mayo, but they're just awful, tasteless and artificial. Don't even bother with them. I am not too thrilled with the Vegan varieties out there either, not to mention, one little jar is very expensive, so if I am making potato salad for a crowd, it's gonna cost me a bundle.
But what is a BBQ without potato salad?
It's the one thing I always go for, especially because I don't eat meat. I bring two things with me to every BBQ. A huge, green tossed salad and a big bowl of potato salad - without mayo. My potato salad is always a hit with everyone. I love knowing that in the midst of the hamburgers, hot dogs, baked beans topped with bacon and mayo-soaked macaroni salad, there are at least two healthy dishes on the table.
