Peter, Peter Pumpkin Eater!







Peter Peter pumpkin eater,
Had a wife and couldn't keep her!
He put her in a pumpkin shell,
And there he kept her very well!



Evidently, our friend, Peter, knew all about the health benefits of pumpkin and he put the empty shell to good use, as well.  Seriously, pumpkins are not just for carving or decoration. Fresh pumpkin is bursting with good stuff, so start eating it. Add it to your muffins, cakes, and pies.  Toss fresh pumpkin into your pancake batter for a different, healthier twist on breakfast.  Mix it into soups, stews, or serve cooked, mashed and seasoned pumpkin as a side dish instead of potatoes. Make a fresh smoothie with pumpkin for a delicious treat that's rich in anti-oxidants. And don't forget the pumpkin seeds! YUMMY!
