The Best Meatless Monday Recipes Ever!



Today is Meatless Monday.  It's the one day of the week folks are encouraged to eliminate meat from one or two or ALL of their meals! Because it's better for their health. It's obviously better for the animals. And the planet. No chicken. No fish. No pork. No beef. For one day.

You can do this!

It's less complicated than you think. And don't worry about withering away from a protein deficiency because you're skipping meat for one day. Never. Gonna. Happen. Not even if you skip meat for a whole week or even your entire life.

Here are a few suggestions:

Just say NO to the bacon or ham on your morning egg sandwich. There's more than enough protein in the eggs. If you include cheese, a good, soft cheese like mozzarella or feta, you're getting even more protein with less fat than other cheeses like American or Cheddar. Instead of adding grilled chicken to your salad at lunch, toss in some chick peas. There's your protein. Or a handful of sunflower seeds, almonds or cashews. Once again, plenty of protein from the nuts.

Dinner can be a bit more challenging if you're new to preparing meatless meals. You can eat pasta with plain marinara sauce every Monday, if you want, and that's fine, but with so many delicious options out there, why limit yourself?

I have a whole collection of tried and true meatless meal recipes. Recipes I've served to my carnivorous son and he absolutely loves them! They're satisfying, delicious and easy to prepare. No weird ingredients you need to hunt for in special stores. Just good, healthy meals you and your family will love. You will love them so much, you won't want to reserve them for Meatless Mondays only!
