Minty Blueberry, Peach Shiver!!
I love the name of this dessert! Minty Blueberry Peach Shiver!
It sounds so refreshing and cooling, don't you think?
More than the name, I am loving that this dessert is actually healthy and loaded with good stuff like fresh, delicious peaches, blueberries and mint!
If you don't know about mint; here are just a few health benefits:
- It's soothing to the digestive tract, so if you have an upset or nervous stomach, eat some fresh mint.
- Mint acts as a cooling sensation to the skin and helps in dealing with skin irritations.
- Mint helps in eliminating toxins from the body.
- Crushed mint leaves help to whiten teeth and combat bad breath.
- Mint is a very good cleanser for the blood.
This recipe only has 45 calories per serving. It also has 5 grams of protein (from the gelatin) and NO ADDED SUGAR!!
Just be sure to make it early in the day, because it will take at least 4- 6 hours to set!
Here's what you need:
1 1/2 cup 365 Everyday Value® Organic Orange Peach Mango 100% Juice Blend
2 (.3-ounce) packages unflavored Jel Dessert (vegan gelatin)
1/2 cup crushed ice or small ice cubes
1 cup fresh blueberries
2 tablespoons finely chopped mint
2 peaches (or nectarines), peeled and chopped
Here's what to do:
In a small pot, bring juice just to a simmer over medium-high heat. Remove from the heat and whisk in gelatin until dissolved; transfer to a large heatproof bowl. Stir in ice until completely dissolved, and then stir in blueberries, mint and peaches. Cover and chill until firm, 4 to 6 hours, or overnight.
